Dominio do Bibei 是位於 Ribeira Sacra D.O 分支產區 Quiroga-Bibei,像所有Ribeira Sacra 分支產區一樣,此地區擁有令人歎為觀止的山脈和河流,但比其他分支產區面積較小和乾旱。 Javier Domínguez 就是這個葡萄園的操作者。

在那些梯田上種有 Mencía、Garnacha、Brancellao 和 Mouratón,新田地透過開墾和使用上述品種的老樹而設立,其餘白葡萄品種包括 Doña Blanca、Godello 和 Albariño。這些田地擁有不同面向和土壤種類,因為這裡是接觸 Valdeorras 之處,所以山區的土壤包括頁岩、花崗岩和粘土。

釀造:
葡萄由人手用10kg的箱子收成,再在冷凍室儲存24小時。葡萄會按不同品種收成,然後會除枝,再以人手挑選。於清涼氣溫下進行前期發酵4天,再每天在500L木桶內進行循環往上方抽水。浸3星期,再完成乳酸發酵。

陳年:
與酒渣20個月,1年於300L法國木桶。沒有淨化。由冬季的天然低溫穩定葡萄酒,再經18個月瓶內陳年。

品酒筆記:
精煉的香氣,明亮紅果與鉛筆芯感覺。口感十分幼細、純淨,像鐳射光一樣集中,有空間,清楚的礦物元素。令人十分有信心的酒,有很好的發展。

 

Dominio do Bibei is located in the Quiroga-Bibei sub-zone of the Ribeira Sacra D.O. Like all Ribeira Sacra sub-zones, this area is one of spectacular mountain ranges and flowing rivers, but it is drier and harsher than the other sub-zones. Javier Domínguez is the author of this crazy adventure to recapture a once grand vineyard. 

Planted on these terraces are old vines of Mencía, Garnacha, Brancellao and Mouratón. New plots are being planted using cuttings from these old vines so as to maintain clonal diversity in the vineyard. In addition to the red varietals, there are plantings of white grape varietals such as Doña Blanca, Godello and Albariño (the cuttings of this last grape being from Do Ferreiro). The sites vary greatly based on the orientation of the plots and the soil types. Because this is a transition zone which touches Valdeorras, soils of slate, granite and clay are interspersed among the hillsides.

Vinification:
Harvest was done by hand using 10 kg cases on 14th of September. In cold storage chamber for 24 hours. The grapes were harvested separately by variety. Bunches were handpicked in the bodega followed by destemming. The grapes were then hand sorted. Cool pre fermentation for 4 days with daily pump over in 500L barrels. Maceration for 3 weeks. Complete malolactic fermentation. 

Ageing:
20 months on its lees. 1st year 300L French oak barrel. No clarification. Stabilized by the natural coldness of winter.  18 months in bottle. 

Tasting Notes:
Really refined nose with a bright red fruit and pencil lead sensation. The palate is so delicate, pure, clean, laser like, aerial and with a clear mineral sensation. It is promising and has a great future.
