Originally founded by a Carolingian monastery, it can be traced back to the year 911, and the base of the cellar is from the end of the 9th century (around 870). Since taking over, the wines are once again produced in a dry or off-dry style, with sugar levels depending on each site, each vintage. All of the Cru wines are once again being vinified separately in old oak barrels; spontaneous fermentations are the norm and chaptalization, re\/de-acidification or any other intervention during vinification is forbidden. Gernot Kollmann wishes the wine would have fermented to fully dry, but as always, he didn't force it. However, the wine is beautifully ripe, lush and also balanced and will integrate its charming sweetness over the years. The sugar doesn't take anything away from the precision and terroir expression and will help the wine to age beautifully over at least a decade. This, again, is a bit more Alsatian in character but with the piquancy of predominantly ungrafted vines of four grands crus that make it into the Escheburg. This wine needs some years to gain finesse, but with the right dishes (cheese as well), this fruit-intense, salty-piquant and slatey Riesling with 12% alcohol will perform well today. Tasted in April 2020.
