Domaine William Fevre是Chablis其中一家非常重要的酒莊,所擁有的Grand Cru(特級園),在區內數一數二。1959 年標誌著 William Fèvre 的第一次收成,此後一直由家族經營,直至1998年由Henriot 集團收購。
Didier Séguier作為首席釀酒師,之前曾於 Bouchard Père & Fils 擔任副手,累積了豐富的經驗,把當時非常橡木風格的Chablis,扭轉為更着重風土。簡單來說,出品更富有Chablis的地方色彩。
至於一級園Premier Cru Viallons,內有8個傳統的地塊(lieux dits)。它們坐落於堅硬、緊密的波特蘭石灰岩層上,土壤中的石灰岩比粘土多;反映了Chablis內所有不同的風土。

2018 年份的 1er Cru Vaillons 美麗地呈現出白桃和春田花花的香氣,並隱約傳來北京檸檬(Meyer lemon)、清脆的青蘋果和梨子等果香。中等至濃郁的酒體,中段有張力、活潑、非常集中,最後扭轉為以鹹味收結。

食物配搭:
魚類、貝殼類、其他海鮮、家禽等白肉,燒烤或以忌廉汁煮皆可。


The Domaine William Fèvre, the largest owner of Grands Crus in Chablis.  1959 marked the first harvest of William Fèvre, owner of the domain of the same name until 1998 as it was acquired by Henriot group.
Head winemaker of Domaine William Fevre, Didier Séguier, worked as assistant winemaker at Bouchard Père & Fils, so he already had experience under his belt, steering what was then a very oaky style of Chablis to one that was much more terroir driven and for want of a better word, just more "Chablis."
Regarding to Premier Cru Viallons, this appellation has 8 distinct « lieux dits ». With a soil base more limestone than clay, sitting on hard, compact Portlandian limestone, it represents all the different types of Chablis terroir under one appellation.

Vinification:
Manual harvest. Very light static settling of the juice to preserve enough fine lees so that the alcoholic and malolactic fermentations can occur naturally.  Maturation for 13 to 14 months, of which 5 to 6 months on fine lees in French oak barrels. The end of maturation occurs in small stainless steel vats.

The 2018 Chablis 1er Cru Vaillons is showing beautifully, mingling notes of white peach and spring blossom with hints of Meyer lemon, crisp green apple and pear. Medium to full-bodied, its satiny attack segues into a tensile, vibrant and nicely concentrated mid-palate, concluding with a saline finish.

Fish, shellfish, other seafood; poultry and white meat, grilled or in a cream sauce.
