Ornellaia從一開始的理念，就是要追求卓越品質。Ornellaia是一款由Cabernet Sauvignon、Merlot、Cabernet Franc 及 Petit Verdot造就的佳釀，忠實呈現出和諧的大自然和獨特的風土。

釀造：
人手採收，在去梗前後進行篩選，之後輕輕按壓。每款葡萄品種和單一葡萄園都分開釀造。在 26-30°C 的不銹鋼罐中發酵兩週，浸皮 10-15 天。蘋果酸乳酸發酵主要在橡木桶中進行，70% 新桶，30% 是用過一次的木桶。

陳年：
酒液放於木桶陳釀18個月。在12個月後會把各種酒液混調，然後回到橡木桶中繼續陳年。裝瓶後，在瓶中陳年12 個月才推出市面。

2011 年的 Bolgheri Superiore Ornellaia 秉承了重要的傳統──極致的濃度和手工釀製出來的芳香。這年份天氣雖然極熱，但果香依然出色，帶有原始的黑櫻桃、異國香料和巧克力的味道……唯一的瑕疵，就是單寧比較進擊，所以還是陳年一下較好。(於2014年發表)

The clusters were hand-picked into 15-kg boxes and then selected by hand on a double sorting table, before and after destemming, and finally softly crushed. Each grape variety and single vineyard block was vinified separately. Fermentation took place in stainless steel tanks at temperatures between 26-30°C for two week, followed by 10-15 days of maceration on the skins. The malolactic fermentation took place mainly in oak barrels, 70% new and 30% once-used. 

Ageing:
The wine remained in barriques, in Ornellaia’s temperature controlled cellars for about 18 months. After the first 12 months of maturation, the wine was assembled and then returned to the barriques for an additional 6 months. After bottling, the wine aged a further 12 months prior to release.
