怡園酒莊(Grace Vineyard)位於距中國山西省太原市以南40公里的太谷縣。這裡具有典型的大陸性氣候:四季分明,乾旱、雨水少,且日照強烈,晝夜溫差大,是種植釀酒葡萄的理想地帶。在著名波爾多葡萄酒學者Denis Boubals的專業協助下,香港企業家陳進強先生於1997年創立怡園酒莊。

怡園酒莊有著獨特的風土條件,為釀酒葡萄的種植和生長提供了得天獨厚的環境。這裡只採用傳統的波爾多葡萄品種來釀造,產量受到嚴格的控制,在美國和法國橡木桶陳釀後,經過最後的瓶釀過程才投放上市。

今天的怡園酒莊獲得了國際葡萄酒界的廣泛好評,其中包括著名的酒評家Jancis Robinson、James Halliday 等國際權威人士以及《Decanter》、《Wine Spectator》等專業雜誌。在陳芳女士的管理下,怡園酒莊已經成為中國最受肯定的葡萄酒酒莊。

奏鳴曲(Sonata),寓意鳴響其與眾不同的聲音,是怡園酒莊釀酒師Yean(李衍彥)和團隊傾心之作。在盡量減少使用機械的情況下,少部分葡萄進行了手工除梗,野生酵母菌發酵,使用容積較小的發酵罐,人工管理髮酵等方式釀製。一款有別於現有怡園葡萄酒風格的小眾葡萄酒。

釀造:
採用了野生酵母菌(本土酵母菌)在開口式小型發酵罐進行酒精發酵。發酵過程中進行手工壓帽,並延長浸漬時間。壓榨後,轉移至橡木桶進行蘋乳發酵。
經50%全新法國橡木桶(結合中度和重度烘烤的桶)和50%新美國橡木桶陳釀12個月。裝瓶前未經冷穩定並僅通過快速過濾,酒的發展過程中可能形成酒石酸結晶。

品酒筆記:
顏色:深紫色。
香氣:香氣上有黑加侖等黑色漿果的味道並帶有一絲草本香料的香氣。
口感:口感上蔓越莓、紅醋栗、雪松和香草等香料氣味與橡木單寧完美融合。


The family-owned Grace Vineyard is located in Taigu, 40km south of Taiyuan, the capital city of China's Shanxi Province. Taigu has a continental climate with distinct seasonal variations. The clean air combined with the Bordeaux-like free-draining sandy soils provide ideal conditions for quality wine grape cultivation.

Chun-Keung Chan founded Grace Vineyard in 1997, aided by renowned Bordeaux oenologist Denis Boubals. Chan's vision is to build the estate into a family legacy.

In 2002, he passed the day-to-day running of the estate to his daughter, Judy Chan. Under her leadership, the winery has won international recognition – including from leading wine critics such as Jancis Robinson MW and James Halliday, as well as magazines such as Decanter and Wine Spectator. The winery has also expanded its market beyond Hong Kong and China, to Japan, Singapore, Great Britain, Belgium and the Netherlands.

Aged for 12 months in 50% old French oak barrique and 50% new US oak barrique

Tasting Notes:
Vibrant, dark cheery red in color. Black to blue fruits dominant on the nose back with lightly spice, star anise and vanilla character. Medium to full weight wine. On the palate it is dense yet refine with well textured tannins & fruits balance.
