Collioure 村落位於接近西班牙邊境,是在Pyrenees的山腳。那裡無論氣候和葡萄酒,也因為鄰近地中海而受影響,葡萄樹卻種於向地中海的斜坡,所以葡萄酒受惠於全年吹著的海風,使葡萄酒新鮮,亦富活力。

頁岩土壤,位於較高海拔,溫度也較低,所以是最適合乾葡萄酒。在這個風土的頁岩為葡萄酒提供了礦物質性格,優雅和力量。高密度的種植(6000棵/公頃)讓樹根生長至地底深處找尋有限水源。

釀造:
人手收成。於大缸發酵。葡萄酒於大缸中發酵前,先經過低溫浸漬,然後是熱發酵。這幾個階段能輕柔地取得香氣、味道、顏色和順滑一點的單寧。陳年過程最好在大缸內進行,是為了令酒更加怡人和果香豐富。它可以保留Grenache Noir的紅果香氣。而使用木桶陳年,就可以給予Syrah、Mourvèdre和Grenache結構,也可以增加餘韻和酒體。

於大缸陳年18個月(70%),也有於木桶的 (30%)

深沉顏色,有強勁紅果、甘草和雲尼拿香氣。成熟了的Grenache提供無花果味道收結,Mourvèdre 為此酒的煙燻味道包圍住,單寧融入味道之中。易喝之選。

 

The village of Collioure is located close to the Spanish border in the foothills of the Pyrenees. The climate and wines are much influenced by its proximity to the Mediterranean. With vines planted on the rolling slopes falling down into the Mediterranean Sea, the wine benefits from cooling year-round breezes producing a fresh and vibrant wine.

Terroir:
The parcels, situated at an altitude where the temperature is cooler, are perfect for dry wines. The schist soil offers mineral characteristics, elegance and strength to the wines of this terroir. The high density of the rootstock per hectare (6000 rootstock/ha) allows the vines grow roots deep down underground where they find limited water supplies.

Winemaking:
Hand-picked harvest. Fermentation in vats. The wines are fermented in vats with a cold maceration beforehand and a hot fermentation afterwards. These various stages gently extract of aromas, colors and silkier tannins. The maturing is essentially carried out in vats, in view of obtaining a pleasant and fruity wine. It conserves the red berry aromas of the Grenache Noir. The use of oak barrel ageing offers structure to the Syrah, the Mourvèdre and the best batches of Grenache, by also adding length and fat.

Ageing:
Maturing for 18 months in vats (70 %) and in barrels (30 %)

Yield:
17 hl/ha

Tasting notes:
Dark colour with intense aromas of luscious red berries, of liquorice and of vanilla. Melted tannins on the palate. The ripened Grenache offers fig notes on the finish and the Mourvèdre coasts the wine with pleasant smoky notes. Easy to drink.
