,每天兩次混合踩壓,酒液經兩次人手過桶濾清處理後,進行蘋果酸-乳酸發酵

陳年:
於混凝土缸內陳年6個月

品酒筆記:
石榴般的紅色,具有細緻和香料的感覺,也有紅莓,黑加侖子的香氣。而叢林氣息及莓果味道在口中散發。柔順單寧緊密而圓潤。這支混釀極為和諧,成就一支典型優雅,副地中海氣息的葡萄酒。

Founded in 1995, Calmel & Joseph is a maison de négoce specializing in Languedoc-Roussillon wines from private wineries from across the region. Over the years, they have built close personal relationships with a large number of growers from all appellations. Convinced of the extraordinary potential of this region, oenologist, Laurent Calmel, and Jerome Joseph work together on the vinification, blending and ageing of wines with the common purpose of demonstrating the little known yet unique quality of these Mediterranean terroirs. As well as our desire to produce high quality wines consistent with their terroirs, we are committed to making wines which reflect our convictions and experience.

Terroir:
The diversity of Languedoc's terroirs allows us to choose the areas that give optimum expression of our indigenous grape varieties. Our Grenache Noir comes from splendid granite or schist soils in the north-west Roussillon, while our Syrah is in a site sheltered by the Black Mountains, where they give of their best. Our ancient Carignan vines are grown on red clay soil and bring a certain freshness to the blend.

Vinification:
The grapes are hand-picked, and 50% are partly crushed. Fermentation happens at 25°C to 28°C for 10 days, with two punch-downs per day. Twice-racked wine then undergoes malolactic fermentation, to preserve the aromatic profile

Ageing:
Aged in concrete tanks for six months.

Tasting Note:
Garnet red in colour. A refined and spicy nose of great purity. Red berry fruit on the second nose with a little more blackcurrant than the previous vintage. In the mouth, notes of garrigue and small berry fruits dominate, underlined by soft, well integrated tannins that are round whilst remaining taut. A blend which is superbly harmonious, as always, for an elegant wine that is profoundly Mediterranean in style.
