為確保最好的品質,所有葡萄均在清晨由人工採摘,用12公斤裝的籃子運送至酒廠後,還必須在篩選台上經再三挑選,務必去除多餘的部分及不完美的果實,之後存放於溫度控制在攝氏 24-28度 (華氏75-82度) 的不鏽鋼桶中進行發酵,並依葡萄品種所需萃取程度進行調整。發酵過程中,每天要進行三次的淋汁作業,以循環發酵桶 0.5 – 1.5倍的汁液。Cabernet Sauvignon、Merlot、Malbec 和 Carmenere 總浸皮時間從 9 - 40 天,Petit Verdot 則為 6 - 8天,實際浸皮時間依每區葡萄的生長狀況而有所不同。最後,葡萄酒被裝入法國橡木桶(70%為新桶) 陳放 22個月,靜待乳酸發酵及酒質穩定自然完成。

Guided by intuition and backed by family heritage, Eduardo Chadwick and Robert Mondavi handcrafted a wine of distinctive quality and character. Seña is the culmination of their wonderful parternship and a passionate journey. Chadwick and Mondavi searched for four long years before finding the ideal Chilean terroir in Valle de Aconcagua. There, they acquired 350 hectares of virgin hillside land.

Seña is an authentic Chilean blend made from the finest Cabernet Sauvignon, Carmenere, Merlot, Cabernet Franc and Petit Verdot varieties, it is well renowned as the best Chilean wine.

Vinification:
The grapes were handpicked in the morning and transported to the winery in 12-kg boxes for a careful inspection on a double sorting table to eliminate plant matter and defective berries. The grapes were fermented in stainless steel tanks at 24°–28°C (75°–82°F), depending on the variety and the level of extraction desired. Three pumpovers were carried out daily during fermentation to rotate 0.5-1.5 times the volume of the tank. Total maceration time ranged from 9 to 40 days for the Cabernet Sauvignon, Merlot, Malbec, and Carmenere, and 6 to 8 days for the Petit Verdot, according to the development of each block vinifed. e nal blend was racked to French oak barrels (70% new) and aged for 22 months, during which time malolactic fermentation and stabilization occurred naturally.

98/100 James SucklingA phenomenal red with aromas of blackberry, licorice, sandalwood and hot stones turns to cigar box and hints of sweet tea. Full body, with incredible depth and concentration yet agile and playful. Long and fascinating. It talks to you. Balanced. The greatest Sena ever. (Winemaker and owner agree.) Perhaps it was the touch of malbec to the blend but there's wonderful purity and beauty. Made from biodynamically grown grapes. Better in 2017.

The 2012 Sena is from a cool vineyard on a rocky hillside with some clay, in the middle of the Aconcagua Valley, where there is still some influence from the Pacific Ocean. This wine has always been a blend, and in 2012 it is half Cabernet Sauvignon, complemented by Carmenere, Merlot, Malbec and Cabernet Franc. Bright and focused, with a nose mixing red fruit, it is also bright-colored, with ripe black fruit and balsamic notes in the shape of tobacco and cedar wood, with a medium-bodied palate, very good freshness and acidity, sophisticated, polished and fine-grained tannins. This is still a baby, but the silky texture makes it accessible now, while the complexity should come with more time. Drink 2015-2022.
