Production:
This brandy is distilled from our own wines, which are extracted from the “Criaderas” that form part of the initial phase in the ageing process of our famous San Cristino “Solera 1948” Brandy. Once this spirit has been distilled, this brandy is aged in chestnut wood barrels which hold 750 litres, and that have been vinified previously with our Pedro Ximénez raisin wine.
Chestnut wood is distinctive in that it does not have excessive notes of tannin. Its predominant flavours and aromas arise from oxidation, which is very sympathetic/sensitive to the native/original product. To a certain extent, it maintains a balance which is neither harsh or astringent, and even helps to ensure that a trace of the original fruit is retained.
Chestnut was the customary wood used for making barrels in Jerez before 1939, when as a result of the deforestation caused by the civil war, it became necessary to replace it with American oak. Consequently, all 38 casks in this criadera are over 75 years old. That is the age of this blend, according to the “Carbon 14” test dating criteria, the average age is 15 years.
Tasting Notes:
Amber in colour, clean, bright and glyceric, with no edges thanks to the neutral quality of the chestnut. On the nose, intense but not heavy, with aromas redolent of raisins and plums arising from the barrels in which it is aged, which have been primed with wine. The enduring quality of the aroma is largely due to oxidation, and has an elegant bouquet, intense but with no harsh tones.
In the mouth, it is serenely balanced, so that the quality of the original aged brandy may be fully appreciated. It has a subtle aftertaste of natural sweetness which helps to smooth the edges of the alcohol, until they become virtually imperceptible. It has intense touches of enveloping woodiness, without bitterness, which renders it particularly agreeable to the palate. It entices one to continue drinking because it does not burn the throat despite being 40% proof.
