Chateau Gilbert & Gaillard的誕生,由兩位葡萄酒發燒友,兼著名酒評家Francois Gilbert及Philippe Gaillard努力創立。兩人自1991年起,出版了行銷五大洲的Gilbert & Gaillard雜誌,將他們的酒評及葡萄酒知識與酒迷分享。經歷多年來走訪世界各地的經驗,以及兩人多年來的專業知識,以及對葡萄酒的熱誠,促使他們於南法的Saint-Chinian及Languedoc成立了Chateau Gilbert & Gaillard。

Gilbert作為釀酒家族之子,而Gaillard作為主力研究釀酒風土的地理學博士,兩人都對大自然尤其尊重。而他們的釀酒哲學,就是希望將Chinian南部產區,以石灰岩為主的獨特風土,從葡萄樹上,帶到飲家的酒杯中,並原原本本的將葡萄酒中的清新,細緻與優雅表達出來。

Clos des Etoiles (Vineyard of the Stars) 是酒莊中最美麗的地方,海拔200米以上,位處灌木叢的中心地帶,周邊有冬青櫟樹、松樹、百里香和迷迭香圍繞。

它的名字源自一個家族傳統,每當漫長的仲夏夜來臨,總喜歡在這兒仰望星空。這兒亦是Gilbert和Gaillard二人夢想之地,希望有天可以釀造出Languedoc-Roussillon區內最好的佳釀。30年後這款佳釀誕生了,起名為« Clos des Étoiles »。

北風吹拂,受惠於清涼的夜晚,葡萄完熟至最佳狀態。Syrah生長於石灰岩黏土上超過35年,白色石塊散布其中,為它們提供所需的水分。

產量低,2017和2020年僅出產了1000瓶。

Chateau Gilbert & Gaillard was born from the efforts of two wine enthusiasts and wine critics, Francois Gilbert and Philippe Gaillard. In 1991, they started publishing wine magazine Gilbert & Gaillard to share their wine critics and knowledge with wine lovers. The magazine is now available on 5 continents. Their years of experiences of travelling around the world and the professional knowledge of wine, as well as their passion for wine help them establish Chateau Gilbert & Gaillard in Saint-Chinian and Languedoc. Gilbert, as the son of the winemaker’s family , and Gaillard, as a doctor in Geography who specializes in the study of wine terroirs, accentuate the importance of nature. The winemaking philosophy of the Chateau is to transcribe the terroir of Chinian to the consumer, from the vine to the glass, keeping all these features namely, the freshness, the finesse and elegance.

Clos des Etoiles is the most beautiful of the plots of our castle. Located in the heart of the scrubland surrounded by holm oaks and pines, thyme and rosemary, it is located at an altitude of over 200m. It takes its name from a family tradition: this is where we like to contemplate the starry sky on long summer nights. This is also where Philippe and François dreamed of one day producing the best cuvée in Languedoc Roussillon. 30 years later, this cuvée was born and is called « Clos des Étoiles ».

Swept by the north wind, it benefits from cool nights which ensure optimal maturity. The Syrahs over 35 years old grow on a limestone clay soil studded with white stones which gives them an ideal water regime and very low yields. In 2017 and 2020, only 1000 bottles of this exceptional cuvée were produced.

« Clos des Étoiles » is located at 200 meters above sea level on a silty-clayey-sandy plateau of Eocene limestone pebbles.

Winemaking:
The grapes come from one single plot, le « Clos des Étoiles », a designated vineyard with a distinctive micro-climate. They are picked by hand then taken in crates to the reception area where the fruit is destemmed and sorted the grapes by hand piece by piece. Vatting lasts three weeks. It involves gentle extraction to develop aromatic complexity and the structure of the future wine. Post-fermentation maceration depends on the results of daily tasting of the must. After devatting, the precious wine spends 3 years in light toast casks.

Tasting Notes:
Brilliant, deep garnet-red emphasized by diffuse red highlights. The nose shows a complex bouquet of tobacco, spice, liquorice, violet and blackberry notes. The palate displays a distinctive velvety tannin structure. Substantial length extends enjoyment for several seconds.
