The family estate Pauly looks back on a long-standing wine tradition – since at least 1624 the Paulys' have been producing wines! In today's world, the Paulys feel, of course, still obliged to continue this long-standing family tradition. Based on their thorough experience, outstanding wines can only be produced from carefully selected grapes as mature and ripe wines are of highestbeneficial quality. Through controlled and careful cultivation and the application of innovative and contemporary techniques have led to softness and balance of the wines.
They always taking into account the family tradition, most of the high-quality “Spätlese” (late harvest), “Auslese” (Selection) and “Beerenauslese” (Dessert Wines) mature now as before for a certain time period in traditional oak barrels. Each year has its own particular and typical flavours which require time and patience and, of course, long-standing experience. Top class wines are on average two years of age, therefore these wines have fully developed their character and will be bottled afterwards.
Many of the Otto Pauly wines were granted top awards from German agricultural chambers and associations. One outstanding example: In 1997, the "1976 Graacher Himmelreich Riesling-Beerenauslese" received the highest award at the DLG (which is the German Agricultural Society) wine awards ceremony, a solid proof of the long storability and freshness of the wines.
