Château de la Baume 是出產 AOC Saint-Chinian 和 Languedoc AOC 的酒莊,距離 Béziers Puisserguier 城鎮 20 公里,Baume 城堡座落在自然公園和 Natura 2000 之中。

此酒非常有Terroir風,鄰近國家保護公園,有很多灌木叢,擁有香草和花香的GSM,口感很有連貫性,帶出獨特St-Chinian區的風味。

釀造:
葡萄會於酒莊內篩選、除梗然後運進缸裡。於缸裡浸漬約三星期,發酵期間採取輕柔的pumping over。每天的品評決定了酒渣的後期發酵。一小部分的葡萄是整批發酵,葡萄汁則會在搾取後即時在缸裡熟成。

品酒筆記:
深榴石色帶點櫻紅。出眾的香氣帶有紅果和黑果,略帶灌木叢、香料及礦物。溫柔、成熟而強勁的味道,同時不失仔細的結構。味道新鮮而持久。

The Château de la Baume is a vineyard that produces wines AOC Saint-Chinian and Languedoc AOC. Located about twenty kilometres from the town of Béziers Puisserguier, the area of the Baume Castle is steeped in a protected natural park and Natura 2000.

Expressive terroir, vanilla and floral GSM, very coherent taste, a unique flavour from St-Chinian area.

Winemaking:
the grapes are sorted at the winery, destemmed then put into tanks. Vatting lasts for approximately three weeks with gentle extraction by pumping over during the fermentation phase. Post-fermentation treatment of the pomace is dictated by daily tastings of the juice. A small amount of grapes are fermented as whole clusters and the juice is matured in casks straight after racking.

Tasting notes:
Deep garnet tinged with crimson. Expressive nose intermixing red and black fruits, notes of garrigue and spice with a mineral dimension. Supple, melted and full attack leading into a refined structure unfurling delicate firmness. Fresh and persistent across the palate.
