Cotswolds Distillery誕生於2014 年，坐落在Cotswolds鄉村起伏的群山之中。創辦人Dan 是土生土長的紐約人和威士忌鑑賞家，他從倫敦搬到Cotswolds，當他看到家外面的金色大麥田，突然靈機一觸：“Cotswolds到處都是大麥，但沒人蒸餾，我們來成為第一個吧！”
採用100% 當地種植的大麥，以傳統方法在地板發麥。在定制的銅鍋蒸餾兩次。
Sherry Cask Single Malt Whisky是精心挑選雪莉酒桶的結合。每年的每一批次都是獨一無二的，取自最好的美國和西班牙橡木桶，其中一些用不甜的 Oloroso 雪莉桶，另一些則用香甜的Pedro Ximénez木桶。所有威士忌在雪莉橡木桶內陳年，釀造出更有深度和美味的威士忌。

Nestled amongst the rolling hills of the Cotswolds countryside, the Cotswolds Distillery was born in 2014. The founder, Dan, a native New Yorker and whisky connoisseur, had moved to the Cotswolds from London. He saw the fields of golden barley around his house and had a brainwave ‘there’s barley all over the Cotswolds and nobody’s distilling it, let’s be the first!’
100% locally grown, floor-malted barley and being distilled twice in the bespoke copper pot stills.  
Sherry Cask Single Malt Whisky is a marriage of carefully selected and blended sherry casks. Each yearly batch is unique, drawn from the finest American and Spanish oak hogsheads and butts, some of which have been seasoned with dry Oloroso sherry and others with sweet Pedro Ximénez. All have been sherry-aged through their full maturation for a deeper and more flavourful whisky.

Tasting Notes:
Brown sugar and cherry pie with a touch of roasted coffee beans greet the nose. To taste, viscous and rich mouthfeel with dark stone fruit, chocolate and a hint of roasted almonds. The finish is full of peppery oak spice and dried fruit.
