如隱世仙境般的Dominikanerberg葡萄園,是德國罕有的獨佔園,由von Nell-Breuning家族單獨擁有。坐落於陡峭山坡及貧瘠的藍色石板土上,面積只有7公頃,卻為釀造Riesling提供了極佳的微氣候條件,突顯出優雅的花香與礦物感。標籤上的Kabinett指所用的葡萄完全成熟,它雖然沒有標明甜度,但殘糖每升達40克,屬於半甜(medium sweet)。

2017的Kaseler Dominikanerberg Kabinett收成時的糖度是78°,發酵至殘糖每升40克,非常果感…桃、薄荷、白堊礦物質。風格近似 Spätlese(晚收)的柔滑和濃郁。餘韻充滿活力,充滿桃等熱情的元素。美妙成熟的酸度成為焦點,感覺輕巧,喝來像半乾(off-dry),不只得甜味。以Kabinett而言,水果的成熟度有過之而無不及。這款酒更像一款優美、輕盈、有趣的Spätlese!

Weingut C. Von Nell-Breuning has been dedicated to the art of wine-growing in the Ruwer Valley since 1670. Dr. Carmen von Nell-Breuning continues the family´s winemaking history into the 11th generation. The estate have produced elegant Riesling, including still wine and sparkling (Sekt). In 2019 they switched their operations to biodynamic viticulture and achieve official Demeter class in 2023.
The delineated, enclosed Dominikanerberg vineyard is one of Germany’s rare monopoly estates, owned exclusively by the von Nell-Breuning family. 7 hectares of steep slopes and barren blue slate ground, vineyard Dominikanerberg provides the perfect microclimatic contions for Riesling wines which are distinctive by their elegance and minerality. The grapes are of Kabinett grade, which means they are fully ripened. The wine is fermented down to 40g/l residual sugar, with medium-sweet flavour.

The 2017er Kaseler Dominikanerberg Kabinett was harvested at 78° Oechsle and was fermented down to 40 g/l of residual sugar, i.e. fully fruitystyled levels... Vineyard peach, minty herbs and chalky minerals. These give way to the delicately creamy yet zesty structure of a Spätlese on the still nicely fruity palate.
The finish is racy and loaded with peachy and zesty elements. The beautifully ripe acidity cuts through the creamy side of the wine and gives the whole thing a sense of focus. The wine is light and tastes more off-dry than fully sweet. The impact and ripeness of fruit on the palate may be too rich to qualify this as a true Kabinett, and this wine proves a beautifully light and playful Spätlese in the making!
