栽種於台中后里,那總是微風徐徐的小小葡萄園,六十年的金香葡萄老藤,啟發了2014年首次採收的白中白傳統釀造氣泡酒。2020是一個獨特的年份,五月雨季早來,隨後是乾燥溫暖的成熟期,最終釀造了2375瓶迷人的氣泡酒。這是一款有個性的葡萄酒,承載著隨著時間累積、來自內在源源的力量,專注、不妥協地探索著土地與季節。

92%金香,60年老藤,來自台中后里 。8%木杉,來自埔里莊園。

釀造:
晚上人手採收。整串壓榨,基酒在不鏽鋼缸和小型老橡木桶,用野生酵母低溫發酵。傳統釀造法,2021年6月瓶中二次發酵,浸渣陳年24個月,2023年5月人手除渣。限量2,375瓶。

品酒筆記:
淺金色調襯托的細膩氣泡,優雅地綻放出水梨、鳳梨、白柚、香草。味蕾中些微的生薑、核桃和礦物質地,細緻地連綿至尾韻。


60-year-old Golden Muscat in our small breezy Houli vineyard parcel has been inspiring our vintage Blanc de Blancs since 2014. The 2020 growing season started with an early rain, followed by a dry warm ripening period, finally gifting 2375 bottles, transformed to an extra brut.

92% Golden Muscat, 60-year old vines, Houli vineyard. 8% Musann Blanc, Puyen estate.

Vinification:
Hand harvested at night. Whole cluster pressed, base wine fermented and aged one year in stainless steel and small barrels. Traditional method sparkling winemaking, tirage in June 2021, 24 months bottle aged on lees, hand disgorged in May 2023. 2,375 bottles crafted.

Tasting Notes:
A pinpoint mousse soaked in a light golden hue, elegantly introducing Asian pear, pineapple, white pomelo, and herbal notes to an expending palate, textured with subtle ginger, walnut, and lingering minerality.
