都怪厄爾尼諾 酷熱天氣下氣泡酒🍾開不停
這兩支喝來有驚喜
德國Immich-Batterieberg的"Jour Fixe" 用Riesling釀製
60高齡的老藤 把生命力注入酒中
像香檳一樣瓶中二次發酵，浸渣陳年3年
不過濾 不除渣
Riesling的天然酸度讓人直流口水
蘋果、柑橘🍋等花果香配上礦石感
證明Riesling絕對可以釀造出優雅的氣泡酒

另一支來自西班牙千米以上的高山⛰️
莊主Raul Bobet既入世（創立《神之水滴》第11門徒的Ferrer Bobet）
亦出世（在空靈寂靜的高山創立Castell d’Encus）
Castell d' Encus的氣泡酒Taïka
用比香檳更早的祖傳方法釀造
部分於木桶發酵 趁仍有餘糖時入樽
入瓶後繼續發酵🫧
於酒窖存放5年
比一般無年份的香檳（2-3年）陳年更久
山上冷涼的夜晚🌙、日夜的溫差與完熟得恰好的葡萄
帶來像熱情果般酸甜合度的果香
烘麵包🥖的香味含蓄
像小農香檳（Grower Champagne）一樣
氣質滿滿

雖不是香檳
但冰鎮起來都好喝有活力
一於繼續喝
