敖雲（Ao Yun）坐落於雲南德欽梅里雪山腳下，由 LVMH 歷時四年勘探後創立。葡萄園分布在阿東、西當、斯農、朔日四個藏族村落，海拔 2,200 至 2,600 米，是全球極高的葡萄園之一。
山勢陡峭，園地由約 120 戶當地藏民全人手打理，無法使用機械。高原強烈日照與顯著溫差，令果皮厚實、結構濃郁，同時保留冷涼氣候的明亮酸度。
在釀酒師 Maxence Dulou 帶領下，酒莊近年降低新桶比例至大約 30%，並加入本土陶罐陳釀。酒款以波爾多品種為主，近年屢獲國際酒評家極高分肯定，成為中國高海拔膜拜級酒莊。

呈深紫色，展現出新興的「敖雲風格」，以馥郁的 Cabernet 果香為主調，帶有大量黑莓、黑加侖子與黑櫻桃……酒體飽滿，單寧細緻有嚼勁；14.5% 酒精融合良好並伴隨明亮的酸度……品質與 2017、2015 相若，但在首次品飲時甚至更勝一籌……非常年輕，必定值得長期窖藏。

我喜歡這酒香的深度與複雜性，展現出黑莓、墨水、焦油、泥土、線香、丁香與黑甘草，亦有百里香的氣息。果味的純淨度（包括黑加侖子）表現極為真實。酒體飽滿，卻保持清新和立體感。單寧極為細緻且融合，與冷涼藍果風味，營造出如千層酥的結構。令人驚嘆的酒，可說是迄今為止中國釀造最出色的葡萄酒。
Located at the foot of Meili Snow Mountain in Yunnan, Ao Yun was established by LVMH after four years of site selection. Vineyards are spread across four Tibetan villages (Adong, Xidang, Sinong, and Shuori) at altitudes between 2,200 and 2,600 meters, making it one of the highest commercial vineyards globally.
Due to the steep slopes, the vines are farmed entirely by hand by around 120 local families. Intense sunlight and wide diurnal shifts yield thick skins and concentrated structure, balanced by vibrant cool-climate acidity.
Under winemaker Maxence Dulou, new oak has been reduced to roughly 30% alongside the introduction of local clay jars. Dominated by Bordeaux varieties, the wine regularly achieves top scores from global critics and has become China’s benchmark high-altitude cult estate.

Very deep purple and very much in the emergent "Ao Yun style" showing lifted, perfumed Cabernet-dominated fruit with plenty of crushed blackberry, cassis and black cherry…full-bodied with fine-grained and chewy tannins, robust but well-integrated 14.5% alcohol and lively acidity…quality is similar to the 2017 and 2015, but actually even better on this first showing…supremely youthful, it will undoubtedly repay long-term cellaring.

I love the depth and complexity of the nose, which brings you down deeply into the wine, showing blackberry, ink, tar, earth, incense, cloves, and black licorice. Thyme, too. The purity of the fruit, including cassis, is the real thing. This is full-bodied, but remains so fresh and vertical on the palate. The tannins are so fine and integrated, producing a millefeuille-like layering of tannin and cool, blue fruit. Incredible wine. The greatest wine made in China so far.
