黑酒之名傳承於古老的卡奧爾洛特河畔,早在中世紀的歐洲,英國人就開始進口這種獨特的葡萄「黑酒」。釀造過程是先將部分葡萄或葡萄的汁液加熱,再進行常規葡萄酒釀造成為這種「黑酒」。為了能夠使這古老的釀酒方式得到傳承,Jean-Luc Baldes家族率先開創了現代化黑酒釀造工藝,使葡萄酒愛好者能體會穿越時代、上等的「黑酒」。

風土地質:
種植在僅有1.3 公頃的擁有最優質土壤、以及最古老的葡萄園中,釀造的的是Cahors法定產區最優質的紅酒。其土質為矽質粘土和鈣質粘土,位於半山麓上的第三梯層葡萄園。

葡萄品種
100 % Malbec。採用單一 Guyot 型剪枝法。每公頃種植 6,000 株葡萄樹。 

種植方式:
採用傳統葡萄種植方式耕作,及進行蟲害管理,嚴格的修剪控制以保證葡萄植株的數目,和樹間充分空間,實現空氣和陽光的流通。

採摘方式:
純手工摘收,細心挑選後將葡萄果粒放置在層條框中,並將其運送到溫度適當的烤爐中微熱,使其失水蒸發進而得到成熟集中的葡萄。 

釀造:
釀酒桶中傳統式發酵,降溫之後,在橡木桶中進行 18 個月陳年。

品酒筆記:
深沉黑色。飽滿酒體,乾果、甘草香氣和味道。層次不錯的酸度和單寧。十分罕有的葡萄酒,並擁有極佳陳年潛力。建議飲用前醒酒。

Limited Release

Its name dates back to the time when the local wine-growers heated some of the grape bunches or the "musts" to produce the so-called "black wines" of Cahors. In echoing these historic origins, Jean-Luc Baldès wanted to recall that such wines were particularly popular with the English in the Middle Ages.

Soil:
Grown on a plot of 1.3 hectare, a selection of the best parts of the oldest and most reputed vineyard in the Appellation region. Silicious clay or clay-and-limestone soil, on the slight slopes of the River Lot's third terraces.

Grape variety:

100% old Malbec vines Severe single Guyot pruning. 6,000 plants per hectare.

In the vineyard:
Traditional growing methods; soil ploughed; supervised control; severe pruning; removal of unwanted new shoots; thinning out of the grape bunches and of the leaves. .

Harvest:
The grapes are hand-picked, sorted carefully on to trays, and then gently heated to further dessicate the already fully ripe grapes.

Vinification:
Traditional fermentation in tanks, after a fall in temperature, then matured in oak casks for 18 months.

Tasting Notes:
Dark black colour. Full body. Dry fruits, candied fruits, liquorice aromas and flavours. Good acidity with noticeable tannin. A very rare wine with tremendous ageing potential. Decanting recommended.
