釀造:
葡萄以人手採收,在分類枱上除梗及篩選。原串葡萄再在10-12 ⁰C低溫下冷浸漬3-5日,以萃取顏色和香氣。添加指定酵母菌,於24-26 ºC發酵5-10日。進行蘋果乳酸發酵後,20%於兩年的法國橡木桶、80%於三年橡木桶陳釀一年。

品酒筆記:
深色的紅寶石色澤令人着迷。典型的Cabernet Sauvignon,香氣絕佳,包括黑櫻桃、黑加侖子、烘焙香料和肉桂。中等酒體、酸度平衡,單寧絲滑,餘韻約中等長度,以果味作結。

We, the wine-makers from Bessa Valley, are inspired by this place as much as the Bessians were 2500 years ago.Now we are the Bessians! It is our destiny to grow the vines of the Valley and make great wine from their fruit year after year. Everything is done with the greatest respect for the nature, the people, the vines and its fruit. We are not in a hurry. We are not losing the harmony.

Vinification:
The grapes are hand-picked, then carefully selected on sorting tables. Cold maceration of whole berries is performed from 3 to 5 days at 10-12 ⁰C in order to extract color and aromas. Alcohol fermentation with addition of selected yeast strains is controlled at 24-26 ºC during 5-10 days. After malolactic fermentation, ageing in French oak barrels 20% two-years/ 80% three-years old for one year.

Tasting Notes:
Deep ruby color fascinates at first. Intense, typical varietal aromas form superb sensations from black cherry, black current, baking spice and cinnamon. Medium body, nice acidity, silk tannins make taste soft and sappy. The after taste is fruity with medium length.
