栽種於台中后里,那總是微風徐徐的小小葡萄園,七十年的金香葡萄老藤,啟發了2014年首次採收的白中白傳統釀造氣泡酒。2020是一個獨特的年份,五月雨季早來,隨後是乾燥溫暖的成熟期,最終釀造了 2375 瓶的迷人的氣泡酒。

92%金香,70年老藤,來自台中后里 。8%木杉,來自埔里莊園。

釀造:
晚上人手採收。整串壓榨,基酒在不鏽鋼缸中和小型老橡木桶,用野生酵母低溫發酵。傳統釀造法,瓶中浸渣陳年24個月,手工除渣。每升加糖0.8克。

品酒筆記:
淺金色調襯托的細膩氣泡,優雅地綻放出水梨、鳳梨、白柚、香草和淡姜的香氣。清新乾淨的礦物感,細緻地連綿至尾韻,餘韻中帶有法國牛油麵包的芳香。(限量 2,375 瓶)


70-year-old Golden Muscat in our small breezy Houli vineyard parcel has been inspiring our vintage Blanc de Blancs since 2014. The 2020 growing season started with an early rain, followed by a dry warm ripening period, finally gifting us 2375 bottles, transformed to an extra brut.

Winemaking:
Hand harvested at night. Whole cluster pressed, base wine fermented on wild yeast in stainless steel and small barrels. Traditional method sparkling winemaking, 24 month bottle aged on lees, hand disgorged. 0.8g/L dosage. 12% alcohol. 

Tasting Notes:
A pinpoint mousse soaked in a light golden hue, elegantly introducing Asian pear, pineapple, white pomelo, and herbal notes to an expending palate, textured with subtle ginger, walnut, and lingering minerality.(2,375 bottled handcrafted)
