Calmel & Joseph成立於1995年,是一間勃艮第式的釀造型酒商,以釀造及銷售法國南部的Languedoc-Roussillon法定產區葡萄酒產品為主。合作夥伴是分佈在Languedoc-Roussillon產區的各家族式酒莊。酒莊創始人之一的Laurent Calmel憑藉多年擔任釀酒顧問的經驗,逐步與產區內多個具有代表性的酒農及酒莊建立了長期的互信關係。

分兩期進行夜間葡萄採收。
首次在成熟期早段進行,以保持新鮮度。
第二次採收在15天後進行,以獲得良好的濃度和各種香氣。
葡萄去莖後,在5°C下浸泡6小時,然後在17°C下進行發酵。

陳年:
15%在一次舊橡木桶中陳釀3個月。

品酒筆記:
明亮美麗並閃爍著金綠色。富含Viognier典型的濃郁香氣,帶有白桃、杏子和各種柑橘類水果的香氣。圓潤,果味濃郁且平衡良好,提供了特有的極佳新鮮感。同時微妙地帶著橡木桶陳釀後的印記。

 

Founded in 1995, Calmel & Joseph is a maison de négoce specializing in Languedoc-Roussillon wines from private wineries from across the region. Over the years, they have built close personal relationships with a large number of growers from all appellations. Convinced of the extraordinary potential of this region, oenologist, Laurent Calmel, and Jerome Joseph work together on the vinification, blending and ageing of wines with the common purpose of demonstrating the little known yet unique quality of these Mediterranean terroirs. As well as our desire to produce high quality wines consistent with their terroirs, we are committed to making wines which reflect our convictions and experience.

Vinification:
The grapes are picked at night, in two passes. The first harvest is done at a relatively early stage in maturity, to keep freshness in the wine. Then 15 days later a second harvest is done, to get good concentration and varietal aromas. Grapes are destemmed and then macerated at 5°C for 6 hours. Fermentation is tempature-controlled 17°C (no malolactic fermentation).

Ageing:
Partial oak ageing for 15 % of the wine for 3 months in barrels that are one vintage old.

Tasting Notes:
Beautifully bright with golden green gleams. It abounds in the opulent aromas that are typical of Viognier, with notes of white peach, apricot and varied citrus fruit. Round, fruity and well balanced, it offers the superbly fresh finish that is characteristic of all our wines. The oak ageing has also left a subtle imprint.
