酒莊的故事始於1954年,當Italo Cescon服完兵役後,決定追隨祖父Domenico的路,他是Raboso del Piave的一位葡萄酒生產商。此後不久,Italo Cescon於1957年以自己之名成立酒莊。
六十多年後的今日,酒莊由Italo 的孩子 Gloria、Graziella 和 Domenico掌舵。他們是古代傳統的現代詮釋者——珍惜時間、關顧和工作的價值,尊重土地和自然。
如今他們於產區 Piave、Friuli 和 Valdobbiadene 擁有 6 個莊園,葡萄園面積達115公頃。2005年他們加入了「有機葡萄酒計畫」,令明天更美好。

CA’ DELLA SCALA這系列以風味作音符,在味蕾上譜出樂章。“Pianissimo”用最好的葡萄釀造,經過傳統方法乾燥後,按照最經典的方法釀造。 由於與優質紅葡萄酒(如Barolo, Brunello等)相比,單寧含量較低,因此容易被大多數人接受,並適合多種配搭。

釀造:
葡萄收成後,經過 3 個月的自然乾燥過程。輕柔壓榨,按季節調整溫度進行長時間發酵,其後完成蘋果酸乳酸發酵。在斯拉沃尼亞(Slavonia)橡木桶中陳年 24個月,然後在新酒桶中陳年5-6個月,瓶中6個月。

品酒筆記:
中等至深濃的寶石紅色。酒香是典型的果醬味,帶有紅色漿果和無花果乾的香氣,還有balsamic黑醋和香料的味道。口感平衡、細膩、柔滑、新鮮,並帶有鹹感。單寧圓潤,餘韻悠長。

食物配搭:
烤肉或燉肉(以紅肉為佳)、野味和陳年芝士。威尼斯傳統:Amarone意大利燴飯。不配菜,淨飲亦完美。

The story of the winery started in 1954, when Italo Cescon, having finished his military service, decided to follow the path taken by his grandfather Domenico, a wine producer in the lands of Raboso del Piave. Shortly thereafter, the "Italo Cescon" winery was born in 1957. 
The winery is now led by Italo's children, Gloria, Graziella and Domenico, modern interpreters of ancient traditions -- cherish the value of time, care and work, and respects the land, nature and authenticity. Today they manage six estates falling under the denominations of Piave, Friuli and Valdobbiadene with vineyards of 115 hectares.
In 2005 they joined the research group "Organic Wine Project", "a choice of love and respect to have a better tomorrow". 

CA’ DELLA SCALA is the series of the melody of flavors. They are the music for the palate. "Pianissimo" is obtained with the best grapes, after the traditional drying of the same it is vinified according to the most classic methods. Due to its lower tannins compared to the great red wines (such as Barolo, Brunello, etc.), it is more accepted by most and lends itself to a wide range of combinations.

Vinification:
3 months natural drying process before crushing and destemming grapes. Gentle pressing and long fermentation with seasonal temperature with finalization of malolactic one. Ageing for 24 months in Slavonia oak casks, then 5/6 months in new tonneaux. Refining for 6 months in bottle.

Tasting Notes:
Deep medium ruby red. The bouquet is typical, jammy, with red berries fruits and dried figs notes, balsamic and spicy. The taste is balanced, fine and velvety, fresh and savory, with round tannins and a long end.

Food Pairing:
Roasted or braised red meat, furred game, aged cheese. Venetian tradition: risotto all'Amarone. Perfect alone.
