Calmel & Joseph成立於1995年,是一間勃艮第式的釀造型酒商,以釀造及銷售法國南部的Languedoc-Roussillon法定產區葡萄酒產品為主。合作夥伴是分佈在Languedoc-Roussillon產區的各家族式酒莊。酒莊創始人之一的Laurent Calmel憑藉多年擔任釀酒顧問的經驗,逐步與產區內多個具有代表性的酒農及酒莊建立了長期的互信關係。
兩位公司創始人,Laurent Calmel與Jerome Joseph對Languedoc-Roussillon產區發展潛力深信不疑。兩人共同的理念推動他們前行,一同釀製,混合與陳釀酒莊的全部葡萄酒款。這也是要向世界證明,在地中海特有的風土人文條件下,可以栽種並釀造出非常優質的葡萄酒;同時他們也渴望讓更多的人瞭解並認同Languedoc-Roussillon產區葡萄酒不為人知的品質與地位。除了堅持在這片風土上釀製出高品質的葡萄酒外,還期望憑藉對法國南部產區風土人文的理解,並通過多年的釀造經驗,陳釀出高品質的傳統風味葡萄酒。

對Malbec是有典型的Limoux風土的地中海內陸性氣候,
而對於Petit Verdot則是近岸的地中海沿海氣候。
釀造:
傳統釀造法。經除莖和其中40%經過榨取。在罐內於25°C至28°C之間發酵三週,同時每天以氣泵攪拌十分鐘。沉澱後進行乳酸二次發酵。
陳年:
在二次舊橡木桶中陳釀3個月。
品酒筆記:
深紅紫色。帶有豐富的紅色水果味並帶有明顯(如黑胡椒和肉桂)的香料味。Petit Verdot和Malbec這種非傳統的混合帶來水果、香料和香烤味的甜美結合。口感柔滑、果香和諧,紅色和黑色水果相互回味,帶有明亮的石榴味,並輔以紫羅蘭和甘草味。 L'Epicurius的驚喜正等待著好奇的味蕾來品嚐!

過往時時聽說白酒配白肉海鮮,但其實很多人忽略了一些南法的紅酒其實是當地人配搭海鮮的首選,皆因香草充足,果香豐盛,單寧質感厚潤,紅酒輕量的單寧也可提鮮,深受南法人喜愛。可大膽嘗試地配法式海鮮湯Bouillabaisse,L'Epicurius單寧圓潤,果香亦可平衡湯的辛香料,喜歡海鮮的朋友也會發覺可令海鮮的鮮味更豐富。
Founded in 1995, Calmel & Joseph is a maison de négoce specializing in Languedoc-Roussillon wines from private wineries from across the region. Over the years, they have built close personal relationships with a large number of growers from all appellations. Convinced of the extraordinary potential of this region, oenologist, Laurent Calmel, and Jerome Joseph work together on the vinification, blending and ageing of wines with the common purpose of demonstrating the little known yet unique quality of these Mediterranean terroirs. As well as our desire to produce high quality wines consistent with their terroirs, we are committed to making wines which reflect our convictions and experience.

Terroir:
Limestone clay. The climate is Mediterranean with a continental influence typical of the Limoux terroir for our Malbec, and profoundly Mediterranean nearer to the coast for our Petit Verdot.
Vinification:
Traditional vinification, with total destemming and partial crushing at 40%. Short ten minute pumping over daily with a fermentation temperature of between 25°and 28°C. Total vatting time of three weeks. Malolactic fermentation after settling.
Ageing:
Matured in barrels (two vintages old) for 3 months.
Tasting Note:
Deep reddish purple. Opulent red fruit and distinctly spicy notes such as black pepper and cinammon on the nose. The luscious combination of fruit, spices and toasted notes is the result of this atypical blend of Petit Verdot and Malbec. In the mouth it is smooth, fruity and harmonious, echoing the same red and black fruit but also with bright notes of grenadine, complemented by violet and liquorice. L'Epicurius is a stunning surprise waiting to tempt the curious of palate!
