釀造:
於冬季輕柔壓碎和除枝,不鏽鋼缸內低溫發酵 40 至 50 天,包括於搾渣前有 10 天冷浸漬。每天。每天淋汁萃取。以重複轉桶和冷凍技術來停止發酵。蘋果酸-乳酸二次發酵於木桶內,再在小木桶內和酒渣陳年。

木桶內 12 個月,瓶內 6 個月

品酒筆記:
深石榴色,帶有紫色邊緣。強勁香味,年輕時充滿果味,帶有紅果和木材、紫羅蘭、百合、香料、咖啡和黑朱古力。酒精融合度高,驚人結構,餘糖給予甜美、絲絨口感、溫暖和力量十足的味道。收結極長,持久度高,帶有果醬和雲呢拿。

如果保存得宜,此酒能在10年後發揮得更好。推薦於陰隌處橫放酒瓶,並需有穩定濕度和溫度。

Through the Terra Viva Verona association Novaia seeks to make its new “neighbours” aware of a responsible use of treatments, not just in order to limit drifting towards its own vineyards, but mostly to improve the quality of the environment.

Vinification:
Gentle crushing and de-stemming of grapes during Winter. Low temperature fermentation in small stainless steel tanks for 40-50 days, of which 10 days of cold maceration prior to fermentation on marc. Daily processing by delestage. Stopping of fermentation with repeated transfer and “Cold technology”. Malolactic fermentation until completion in wood. Batonage on own yeasts in barrique.

Ageing:
12 months in barrel; 6 months in bottle.

Tasting Notes:

Deep garnet red with purplish hue. Intense perfume, fruity when young, with hints of red fruit and underwood, violet, iris, spices, coffee and bitter chocolate. Good alcoholic taste, wonderful structure, sugar residue giving a sweet, velvety, warm and extremely intense taste with a very long aromatic persistence with evident hints of jam and vanilla.
When well kept, it can enhance all its features in the 10 years following vintage. It is advisable to store bottles horizontally in a cool and dark place with constant humidity and temperature.
