Corvina, Corvinone, Rondinella

輕柔壓碎葡萄和除枝。於溫度調控小不鏽鋼缸發酵 7 至 8 天。在溫度調控下進行發酵前浸漬。每天淋汁萃取。於木桶內進行蘋果酸-乳酸二次發酵,於酒渣在小木桶陳年。

在木桶 18 個月,瓶內 4 個月

For Novaia bio production is the natural consequence of a lifestyle. Novaia is a member of Terra Viva Verona association, through which it promotes sustainable farming knowledge and practices. Through the Terra Viva Verona association Novaia seeks to make its new “neighbours” aware of a responsible use of treatments, not just in order to limit drifting towards its own vineyards, but mostly to improve the quality of the environment.

Grape Varieties:
Corvina, Corvinone and Rondinella

Gentle crushing and de-stemming of grapes. Fermentation at controlled temperature in small stainless steel tanks for 7/8 days. Maceration prior to fermentation at controlled temperature. Daily processing by delestage. Malolactic fermentation until completion in wood. Batonage on own yeasts in barrique.

18 months in barrel; 4 months in bottle.

Tasting Notes:
Deep ruby red wine. Clear and intense perfume with hints of red berries, together with spices and notes recalling dried grapes. Good alcoholic content, medium-low acidity, medium tannic features and good roundness. A wine with body and structure, flavour some, persistent and good balance.
When well preserved it can enhance all its features in the 10 years and more following vintage. It is advisable to store bottles horizontally in a cool and dark place with constant humidity and temperature.
